My mother passed away nine years ago and although I continue to miss her each and every day she left behind a lovely pile of notebooks and albums containing recipes for all of the favorite family recipes and foods that we enjoyed.
As I sort through the notebooks and loose sheets of paper to put together my own recipe books of mom’s home cooking I am looking forward to sharing them with all of you and hope that you and yours enjoy the recipes as much as my family does.
Most of the recipes are from the 1950s and 1960s.
Applesauce Bran Bread
Ingredients
1 ½ cups flour
1 tbsp. baking powder
1 ½ tsp. cinnamon
½ tsp. salt
½ cup packed brown sugar
1 egg
1 cup thick applesauce
½ cup milk
¼ cup oil
1 cup whole-bran cereal
½ cup raisins
mix flour, baking powder, cinnamon and salt well
stir in brown sugar making sure all lumps are broken up; set aside
beat egg in bowl with fork
blend in applesauce, milk, and oil
stir in brand, let stand 5 minutes
add to flour mixture, stirring to moisten thoroughly
quickly stir in raisins
turn batter into greased 9x5x3 inch loaf pan
bake at 350 F for 45 to 50 minutes or until prick in center comes out clean
cool in pan on rack 5 minutes
invert on rack and cool thoroughly
To keep fresh, wrap in airtight back and freeze. will keep for 1 – 2 months. Remove slices as you need them.
Old-Fashioned Apple Crunch
This old-fashioned dessert has been a favourite at our house for years. For an extra special treat serve it warm and topped with ice cream or whipped cream.
Ingredients
2 ½ cups thinly sliced apples
1 tbsp. lemon juice
½ cup brown sugar
1.2 cup graham wafer crumbs
½ tsp. cinnamon
½ tsp. nutmeg
¼ cup soft butter
arrange apples in a greased baking dish and sprinkle with lemon juice
combine sugar, wafer crumbs, spices, butter and sprinkle over apples
bake in preheated oven at 375 F for 25 to 30 minutes
